One room, one hearth
We found a narrow room in Shoreditch with a chimney already in the wall. It felt less like a discovery than a permission — to build a kitchen entirely around live fire.
Everything since has followed from that: the menu, the light, the pace of the room.
By the numbers
Cooking without hiding
Open fire is unforgiving. There are no dials, no timers you can trust — only the coals, your hands and your attention. That honesty runs through the whole kitchen.
Our cooks learn to read heat the way a gardener reads weather.

01
Fire
Everything meets the coals. It is our only heat and our loudest ingredient.
02
Season
The menu is written by our growers and the coast — we simply follow.
03
Room
Low light, warm surfaces, unhurried service. The meal steps forward; everything else steps back.
